Zuppa di Pomodoro

Tomatoes will no longer be in season in Europe. I went early to the farmers market in Gent made friends with a nice lady and got the best of the best. I did had to use one can of ripped tomatoes. Public relations came in handy, they always save the best products for theire best clients you just have to be polite and kind to get the goods.

Ingredients for 2

  • 6 tomatoes (I used beefsteak tomatoes)
  • 1 medium size onion chopped
  • 2 garlic cloves chopped
  • 1 tablespoon of wine vinager
  • 2 tablespoons of olive oil
  • 2 cubes of vegetable stock
  • 1 can of tomatoes
  • 1 can of water
  • 1 tablespoon of flour
  • 1 teaspoon of brown sugar
  • 2ooml of soy cream
  • salt
  • pepper

For the garnish

  • 1 tablespoon of olive olil
  • basil

Instructions

Boil tomatoes and take the skin off, put aside

Heat olive oil in a large sauce pan

Then add the onion and stir until golden

Add garlic and stir until golden

Add tomatoes and the canned tomatoes to the sauce pan

After 5 minutes add the stock cubes and the can of water

Add sugar and vinager and stir

Let it boil in medium heat for at least 30 minutes

Add salt or/and pepper to taste

Add flour to thicken as needed

Add more sugar of wine depending on taste 🙂

 

Garnish:

Cut basil thin and put in a small bowl

Add olive olil and salt

Use on soup once it is served
