Vegan Vanilla Chia Pudding with fresh berries.
Chia is in fashion because of its health benefits. I do recommend to make this pudding at least 5 hours before eating it because the chia seeds need to get fluffy and yummy! I use stevia as sweetener because it comes from the fruit and for what I have read it the most healthy sweetener there is I would love to hear your comments on this. The fruit can be any fruit that is in season and the milk could be any vegan milk. I use very good quality vanilla because it does make a big difference in taste. This is my favourite breakfast and gives me the energy I need to keep on going for the whole day.

Ingredients for 1
- 1/4 cup of chia seeds
- 3/4 cup of organic almond milk
- 1 tap of vanilla extract
- 1 teaspoon of stevia o 1 teaspoon of agave syrup or maple syrup
- 1 small pinch of salt
- 1/4 cup of strawberries
- 1/4 cup of blueberries
- 2 tablespoons of homemade granola

Instructions
In a bowl mix the chia and milk. Stir well. Add salt, sweetener and vanilla. Let it rest for at least 5 hours or you could make it the day before and have it in the morning.
Add the fruit and granola. Serve cold.
