Mango and Cranberries Salad with Maple Syrup Dressing
Haven’t made this in a while. Ready for an amazing vegan salad with mango. The fruits are all in season, nuts are great for your brain and maple syrup makes a great substitute for honey. I paired it with a Sicilian red wine and it was dreamy! You need to make this salad asap.

Ingredients for 4
- 2 pears
- 1 mango
- 100 grms of nuts smashed
- 3 table spoons of dried cranberries
- 2 table spoons of sunflower seeds
- 200 grms of baby lettuce
For the dressing
- 1 table spoon of maple syrup
- 2 table spoons of dijon mustard
- 6 table spoons of extra virgin olive oil
- 3 table spoons of balsamic vinager
- 1 tea spoon of sea salt
- a pinch of pepper

Instructions
Cut the pears and mango into squares add in a large salad bowl
Add the cranberries
Smash lightly the nuts and add
Add the sunflower seeds and mix
For the dressing
Mix all the ingredients very well and serve directly to plate, salad tends to become saggy if you put the dressing on and the keep aside.
