Dumplings filled with shiitake mushrooms

Ingredients
For the filling:
- 200g cabbage
- 1/2tsp salt
- 100g onion
- 10g ginger
- 3 cloves of garlic
- 20g chinese chives (garlic chives)
- 10g dried shiitake (you can use fresh shiitake but dried has more flavour)
For the dough:
- 200g all purpose flour
- 110g hot water (adjust the amount of water if needed)
For the sauce (yum):
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tsp toasted sesame oil
- 10g green onion
- 1 tbsp toasted sesame seeds
- 1 tsp chili bean paste (optional)
- 1 tsp sweet soybean paste (optional)

Instructions
For the dough:
Put flour in a bol add hot water mixing slowly with a spoon until water is incorporated. Use your hands to finish and make a ball. Wrapp dough in a plastic film and let it rest in fridge for at least 1hr.
For the filling:
First choppe finelly the cabbage put in a large bol and put salt to let the water come out, let it rest while you chopp all other ingredients. Squeez the exces water our of the cabbage and incorporate to the other ingredients.
For the sauce (yum):
Mix all ingredients in a small bol for dipping dumplings .

Doing the dumplings (the technique):
Separate dough in 2, make two balls.
